that orange goop in the casserole dish

When I was a kid I wondered why at Thanksgiving and Christmas we would ruin perfectly good marshmallows by putting them in sweet potatoes. Sweet potatoes are neither sweet nor do they taste like potatoes. Don't get me wrong, I love sweets and I love potatoes, but they are neither. I have made it a habit to not eat foods that look like I have already eaten, thus guacamole, yams and sweet potatoes have not been on my menu for a long time. Then one day I got married! When you're married you get in-laws, and if you're lucky you get in-laws of the in-laws. We happened to move a few hours away from our in-law in-laws (here after known as ILIL). Our first year living here we were invited down to Vancouver WA for a visit at Christmas time. Well low and behold guess what the ILILs were serving for dinner? Sweet Potatoes! Well, trying to be polite I took some thinking I guess I should eat a small spoonful. Everyone was saying I would like it, but being skeptical and having heard the "try it, you'll like it" speal before I thought "YEAH RIGHT!" Was I ever wrong, I loved those sweet potatoes! I now insist on them for every Turkey Dinner.

So for those of you who were thinking "Yeah right, they're still sweet potatoes" I dare you to try this receipe. You will finally be able to enjoy that dish of orange sludge for Thanksgiving.

3 c. mashed sweet potatoes
1 c. sugar
2 eggs
1 tsp vanilla
1/3 c. milk
1/2 c. margarine melted

Topping:
1 c. brown sugar (firmly packed)
1/3 c. flour
1 c. chopped Peacans
1/3 c. melted margarine

Combine ingredients and beat till smooth. Spoon into greased 2 qt. casserole.

Combine and sprinkle topping and bake at 350 degrees for 30 minutes.

Yes there is so much sugar you can't taste the yams... mmmm.

No receipe or cute baby pictures is going to make me eat yam, squash or even the potatoes that make the false claim of being sweet! You may have caved, but I am still fighting the good fight.
